Tamarind: Mainstream Pad Thai in the U.S. is usually a super sweet, red-hued concoction involving numerous ketchup. Typically, the tangy sweetness of pad Thai comes from sugar and tamarind paste. In many of our other posts, we use tamarind concentrate from the jar, and many of you viewers pointed ou
